Singapore’s gastronomic landscape is set to be enriched with the return of the “Seafood Loves Sake. 2024” gourmet festival. Now in its fourth year, this culinary event is set to continue the symphony of flavours and pairings, organised by The Japan Food Product Overseas Promotion Center (JFOODO). The festival, from January 20th to March 17th, 2024, is a tribute to Singapore’s evolving and sophisticated palate of food and wine enthusiasts.

The festival showcases 32 sets of exquisite pairings of seafood and sake, highlighting the harmonious blend of delicate seafood flavours with the elegant profiles of sake. This year’s event introduces various sake types, including aromatic, smooth, refreshing, rich with umami, aged with a nutty fragrance, and the emerging naturally sparkling varieties. This diversity in sake selection opens up a world of pairing possibilities, offering a unique taste experience that is innovative and rooted in Japanese tradition.

The 2024 edition of “Seafood Loves Sake” features 16 renowned restaurants in Singapore, including the prestigious Three Michelin-starred ODETTE and two other One Michelin-starred establishments, Tess Bar & Kitchen and WHITEGRASS. Each participating restaurant will offer unique menus, emphasising the impeccable pairing of sake and seafood. These menus are not just meals; they are culinary journeys carefully curated to showcase the best of both worlds.

Mr. Tetsuya Ito, Senior Director of JFOODO, expressed his pleasure about the event, stating, “We are excited to present the Seafood Loves Sake. 2024, an elevated pairing informed by experts. With guidance from sommeliers and the culinary expertise of distinguished chefs, this exceptional collaboration promises to deliver a truly splendid combination of sake and seafood.”

Bangkok’s bar scene just got a whole lot funkier with the opening of F*nkytown, a new cocktail bar that’s stirring up the city’s nightlife with its unique concept. Located on Sukhumvit 37, this old-school disco-inspired bar spans the 4th and 5th floors, complete with a rooftop alfresco area in the heart of bustling Phrom Phong.

Behind F*nkytown’s innovative approach is a team of seasoned professionals. Group Beverage Manager Pae Ketumarn leads the bar, whose award-winning career includes stints at two of the World’s 50 Best Bars – Sober Company in Shanghai and The SG Club in Tokyo. In the kitchen, Chef Theo Tomasa, formerly of The Connaught and Annabel’s in London, collaborates with Group Head Chef Luqman Hakim Hamzah, Sarnies Group, to create a menu that’s as funky as it is flavourful.

F*nkytown’s signature is its funkiness scale, ranging from 1 to 5, allowing guests to choose their drinks and meals based on their adventurousness. This scale is a creative way for patrons to explore and experience big flavours, with drink names and flavours mimicking food in a funky liquid form.

The drink menu at F*nkytown is a journey through taste and creativity. For instance, the Tokyo Banana, with a funkiness level of 2, blends miso butter, Haku vodka, banana, white cacao, lemon, and egg white. More adventurous drinkers might opt for the Caesar Salad drink, rated 4 on the funkiness scale, featuring caesar cordial, Widges ecoSpirits gin, parmigiano foam, romaine lettuce, tomato, lemon, and tonic. The Som Tum, at the top of the scale with a funkiness of 5, is a daring mix of som tum cordial (spicy), Roku gin, fish sauce caramel, honeyed wine, and dried shrimp.

F*nkytown also offers twisted takes on classic drinks, like the Cold Brew Martini with coffee kombucha, Plantation 3 Stars ecoSpirits rum, Mr. Black cold brew liqueur, and jasmine, and the Sundae Old-Fashioned, featuring red beans, Suntory Chita whiskey, kinako, black sugar, and hinoki bitters, both at a funkiness level 3.

The food menu is equally inventive, with bite-sized snacks like the Hamachi Crudo Tart, Crispy Pig’s Ears with fermented spicy durian sambal, and the savoury Bone Marrow Canele. For larger plates, the Jasmine Wagyu is a standout, featuring grain-fed Thai wagyu striploin with miso-yuzu bearnaise, sourced from N.Nuea, a local premium-grade wagyu farm.

F*nkytown’s ambience is completed with funky music playlists covering funk, soul, R&B, and 80s disco, and live DJs spinning from Thursdays to Saturdays. This new venture by the Sarnies Group is their first foray into the cocktail bar concept, and it’s already raising the question: Is this funky enough for Bangkok’s vibe?

The gastro lifestyle in Penedès is as varied and rich as its wines. Catalan cuisine, known for its bold flavours and rustic charm, is a feast for the senses. One cannot talk about Catalan food without mentioning its olive oil – golden, fragrant, and a staple in every kitchen. This liquid gold drizzled over local dishes adds a touch of Mediterranean magic.

Cheese lovers are in for a delight with the variety of Catalan cheeses. Tupi, a spicy and tangy cheese made from sheep, goat, or cow’s milk and flavoured with aniseed liquor, is a traditional favourite. It’s typically prepared in clay pots and is known for its intense flavour. Then there’s Mato de Montserrat, a fresh cheese enjoyed young, often paired with honey or jam for a sweet and creamy dessert. The Alt Urgell-Cerdanya cheese, the first to receive a D.O. designation in Catalonia, is another must-try. Made from pasteurized cow’s milk and aged for 45 days, it has a semi-soft texture and a grassy and nutty flavour profile.

The year-round series of festivals kicked off in January 2023 with “Where Art Takes Shape,” a 10-day celebration that coincided with Singapore Art Week. Marina Bay Sands’ next event will be themed: “Where Your Senses Feast,” a lively food and wine festival from May 15 to 28 and will feature over 30 dynamic events across the resort.

Food lovers will be in for a treat as they embark on a star-studded gastronomic journey. The festival will include a first-ever Michelin-starred chef collaboration, an experiential dining affair at Marquee Singapore, and a French wine cave at AVENUE Lounge. One of the highlights of the festival will be the Six Star Dinner, jointly presented by guest Chef Stefan Stiller of Taian Table (three-star), culinary maestro Chef Tetsuya Wakuda of Waku Ghin (two-star), and Executive Chef Greg Bess of CUT by Wolfgang Puck (one-star). This multisensory dinner will combine the best of cuisines and entertainment, melding fashion-forward elements and contemporary performances with the impeccable prowess of the three culinary maestros.

The experiences will take place throughout May, with highlights including Black Tap’s limited-time wagyu hot dog, Renku Bar & Lounge’s celebration of craft cheeses, and Yardbird’s premium bourbon highballs and lemonades.
